The flying changes the usual stunt-driving calculation: a jump you'd fall short of on the ground can be saved in the air, which makes the tracks far more ambitious than a grounded game could be.
Once airborne you can pitch the car with the arrow keys, which extends a jump or corrects an angle. It's a correction tool rather than free flight.
