By aiming. Catching the ball on a flipper and holding it lets you aim at a specific ramp or target, which scores far more than reflexively flipping.
What is tilting?
Nudging the table too hard, which disables the flippers as a penalty. Small nudges are allowed; repeated hard ones are not.
